Chocolate Cake and Cream Cheese Frosting

Sometimes you just have to give in to the temptation of chocolate cake. The boys are out skiing and the girls and I are having a quiet night. I decided that chocolate cake was in order. I made a box cake by *Pillsbury*. I knew I didn't have any "store bought" frosting, so I turned to my number 1 source for recipes: the internet. Here is the recipe I followed:

Cream Cheese Frosting
8 ounce cream cheese (softened, I used whipped)
1/4 c. butter (softened)
1 1/2 t. vanilla extract
2 c. confectioners sugar

Cream together cream cheese and butter until creamy. Mix in vanilla extract. Stir in confectioners sugar (I added 1/2 c. at a time). Be sure to refrigerate the cake after frosting, as this has cream cheese in it.

My youngest says I need my own show, like Cake Boss, she declares. I love that girl! She sure knows how to make a Mom feel good.

So now it doesn't really matter if we have a snow day or delay tomorrow, we are armed with chocolate cake. Let it snow!

  3. Being snowed in with chocolate cake sounds like the PERFECT day to me! :)
    I don't think the snow is suppossed to stick around for long...it's amazing how it can get our spirits down though.

  7. I agree with Jen, cream cheese all the way!!! I made a pan of rice krispie treats this weekend and I ate almost the whole pan myself, tis the season I guess! Have fun with the new camera.
